Manual harvest, spontaneous fermentation in concrete tanks for 15 days, maturation in concrete for 5 months and further 10 months of maturation in 500-liter tonneaux and barriques, both of 3rd and 4th passage. Bottled on 21st March 2019 – 2650 bottles produced, 5 months of bottle aging.
